Crème Chiboust is a crème pâtissière (pastry cream) lightened with stiffly beaten egg whites. Though occasionally using whipped cream to lighten this is traditionally a millefeuille cream.Crème Chiboust can be flavoured with vanilla orange zest or liqueurs.
