In enzymology a 2-methylcitrate dehydratase (EC 4.2.1.79) is an enzyme that catalyzes the chemical reaction(2S3S)-2-hydroxybutane-123-tricarboxylate (Z)-but-2-ene-123-tricarboxylate + H2OHence this enzyme has one substrate (2S3S)-2-hydroxybutane-123-tricarboxylate and two products (Z)-but-2-ene-123-tricarboxylate and H2O.This enzyme belongs to the family of lyases specifically the hydro-lyases which cleave carbon-oxygen bonds.
