In enzymology a theobromine synthase (EC 2.1.1.159) is an enzyme that catalyzes the chemical reactionS-adenosyl-L-methionine + 7-methylxanthine S-adenosyl-L-homocysteine + 37-dimethylxanthineThus the two substrates of this enzyme are S-adenosyl methionine and 7-methylxanthine whereas its two products are S-adenosylhomocysteine and 37-dimethylxanthine.This enzyme belongs to the family of transferases specifically those transferring one-carbon group methyltransferases.
