In enzymology a sucrose-phosphatase (EC 3.1.3.24) is an enzyme that catalyzes the chemical reactionsucrose 6F-phosphate + H2O sucrose + phosphateThus the two substrates of this enzyme are sucrose 6F-phosphate and H2O whereas its two products are sucrose and phosphate. This enzyme belongs to the family of hydrolases specifically those acting on phosphoric monoester bonds. The systematic name of this enzyme class is sucrose-6F-phosphate phosphohydrolase.
