Makdous (Arabic: المكدوس‎ or sometimes المقدوس) are oil cured eggplants. Part of Levantine cuisine they are tiny tangy eggplants stuffed with walnuts red pepper garlic olive oil and salt. Sometimes chilli powder is added.
