Lyonnaise potatoes is a French dish of sliced pan-fried potatoes and thinly sliced onions sautéed in butter with parsley. Lyonnaise means “from Lyon” or “Lyon-style” after the French city of Lyon. The potatoes are often par-cooked before sautéeing.
