Hollandaise sauce (/hɒlənˈdeɪz/ or /ˈhɒləndeɪz/; French: [ʔɔ.lɑ̃.dɛz]) is an emulsion of egg yolk and liquid butter usually seasoned with lemon juice salt and a little white pepper or cayenne pepper. In appearance it is light yellow and opaque smooth and creamy.
