Five Counties is a combination of five English cheeses: Cheddar Cheshire Derby Double Gloucester and Red Leicester. The five types of cheese are combined in alternating layers of yellow-orange and white. Five Counties is manufactured by the Ilchester Cheese Company and is a registered trade mark of that company.A similar cheese combination is marketed by Coombe Castle International as Saxon Shire or Saxon Shires.
