A digestive biscuit sometimes described as a sweet-meal biscuit is a semi-sweet biscuit (known in the USA as a cookie) that originated in the United Kingdom and is popular worldwide. The term digestive is derived from the belief that they had antacid properties due to the use of sodium bicarbonate when they were first developed. Historically some producers used diastatic malt extract to digest some of the starch that existed in flour prior to baking.
