Cumian [tsʰu˥mjɛn˥˩] (lit. thick noodles) are a type of Chinese noodle commonly used in the cuisines of northern China. In addition it may also be found in Hong Kong as well as in restaurants specializing in northern Chinese cuisine in other parts of China.
