Caldo gallego (Galician stew) is a white bean soup dish from Spain. Ingredients include cabbage or other greens potato and fatty pork. The pork used can vary from sausage to ham or bacon (compango). Served hot as a starter it is often part of Xantar (noon lunch) and sometimes dinner. Among the peasants usually served in cuncas.
