Ajoene /ˈɑːhoʊ.iːn/ is a chemical compound available from garlic (Allium sativum). It was first isolated in 1983 by its inventors (patent US4665088 [1][2] ) Rafael Apitz-Castro and Mahendra K. Jain and further studied in the laboratory by Eric Block together with the inventors and other coworkers. The name (and pronunciation) is derived from ajo the Spanish word for garlic.
