In enzymology an acyl-[acyl-carrier-protein] desaturase (EC 1.14.19.2) is an enzyme that catalyzes the chemical reactionstearoyl-[acyl-carrier-protein] + reduced acceptor + O2 oleoyl-[acyl-carrier-protein] + acceptor + 2 H2OThe systematic name of this enzyme class is acyl-[acyl-carrier-protein] hydrogen-donor:oxygen oxidoreductase. Other names in common use include stearyl acyl carrier protein desaturase and stearyl-ACP desaturase.
