In enzymology an acetylornithine deacetylase (EC 3.5.1.16) is an enzyme that catalyzes the chemical reactionN2-acetyl-L-ornithine + H2O acetate + L-ornithineThus the two substrates of this enzyme are N2-acetyl-L-ornithine and H2O whereas its two products are acetate and L-ornithine.This enzyme belongs to the family of hydrolases those acting on carbon-nitrogen bonds other than peptide bonds specifically in linear amides.
