In enzymology a 37-dimethylquercetin 4′-O-methyltransferase (EC 2.1.1.83) is an enzyme that catalyzes the chemical reactionS-adenosyl-L-methionine + 53’4′-trihydroxy-37-dimethoxyflavone S-adenosyl-L-homocysteine + 53′-dihydroxy-374′-trimethoxyflavoneThus the two substrates of this enzyme are S-adenosyl methionine and 53’4′-trihydroxy-37-dimethoxyflavone (rhamnazin) whereas its two products are S-adenosylhomocysteine and 53′-dihydroxy-374′-trimethoxyflavone (ayanin).This enzyme belongs to the family of transferases specifically those transferring one-carbon group methyltransferases.
