12346-Pentagalloyl glucose is the pentahydroxy gallic acid ester of glucose. It is the common precursor of gallotannins and the related ellagitannins.Pentagalloyl glucose can precipitate proteins including human salivary α-amylase.It may also be used in radioprotection.
